…Baking a Yule log cake can be time-consuming; thankfully, the individual steps aren't too difficult! Try this recipe to get started: Cake: 2/3 cup flour 1/4 tsp baking soda 1/4 tsp salt 4 eggs 3/4 cup sugar 3 squares unsweetened chocolate 2 tbs water Filling: 1/2 pint whipped cream 2 tbs powdered sugar 1 tsp vanilla Frosting: 1/3 cup butter 2 cups powdered sugar 1/4 cup cocoa 2 tbs milk 1/2 tsp vanilla Preheat oven to 350degrees. Grease 15 x 10 jelly roll pan; line with waxed paper; grease waxed paper. Mix flour, soda, and salt. Beat eggs in small mixer bowl on high, until thick and light (about 5 minutes). Gradually add sugar, beating until thick. Melt chocolate and water together, and add to egg mixture. Fold in dry ingredients. Spread in prepared pan; bake 15 - 17 minutes, until cake springs back when lightly touched. Remove from oven; turn out immediately onto a tea towel that has been sprinkled generously with powdered sugar. Remove waxed paper; trim any crisp edges on cake. Beginning at narrow end, roll up cake and tea towel together. Allow to cool. Filling: Whip cream until soft peaks form; stir in powdered sugar and vanilla; whip until stiff. Unroll cake when cool; spread whipped cream on top. Re-roll without towel. Cut a thin slice off each end of roll to make even. Frosting: Combine all ingredients, beating until smooth. Using sliced off cake ends, make some bumps on your log; use some frosting to stick bumps to sides of cake. Frost entire cake. Run a fork along frosting, giving a tree bark effect. Sprinkle with powdered sugar; decorate with holly or other decoration materials. Store in refrigerator.
